General Manager

At Mamma Margherita, hospitality is a feeling — not just a service. We’re looking for an experienced, people-focused General Manager to lead our front-of-house, bar, and overall guest experience, while working in close partnership with our Head Chef, who leads the kitchen.

This role is about leadership, culture, and creating a place where guests love to return and teams love to work.

The Role

As General Manager, you will have overall responsibility for the front of house, bar, service standards, people management, and commercial performance of the restaurant. You’ll work side-by-side with the Head Chef to ensure the entire operation runs smoothly — one team, one vision.

You’ll be the heartbeat of the restaurant, setting the tone, upholding our values, and making sure every guest feels part of the famiglia.

Key Responsibilities

🍷 Front of House & Bar Leadership

  • Lead and oversee all front-of-house and bar operations

  • Set and maintain exceptional service and hospitality standards

  • Ensure the bar delivers consistent quality in drinks, presentation, and speed

  • Create a warm, welcoming atmosphere for every guest

 

👥 People & Culture

  • Recruit, train, and develop FOH and bar team members

  • Build a positive, inclusive, and motivated team culture

  • Lead by example with energy, professionalism, and kindness

  • Support staff wellbeing, performance, and progression

  • Manage rotas, holidays, and staffing levels effectively

 

🤝 Partnership with the Head Chef

  • Work closely with the Head Chef to align service and kitchen operations

  • Collaborate on menu launches, promotions, and service flow

  • Communicate clearly to ensure smooth, coordinated services

  • Share responsibility for overall restaurant success

 

📊 Commercial & Operational Management

  • Take ownership of budgets, labour control, and cost management (FOH & bar)

  • Drive sales through service excellence, upselling, and guest engagement

  • Manage suppliers for bar and FOH operations

  • Ensure compliance with licensing, health & safety, and legal requirements

  • Analyse performance and implement improvements

What We’re Looking For

  • Proven experience as a General Manager, Restaurant Manager, or similar

  • Strong background in FOH and bar operations

  • Excellent leadership, communication, and people skills

  • Commercial awareness and strong organisational ability

  • A guest-first mindset with high standards

  • Ability to work closely with kitchen leadership as a true partner

  • Passion for hospitality and team development

 

What We Offer

💷 £35,100 per annum salary
💰 Up to 25% annual bonus, paid quarterly
